Potato Leek Soup - cooking recipe
Ingredients

3 medium size leeks
1 medium size onion
4 medium size potatoes
2 Tbsp. butter
1 c. milk
salt and pepper
chives (optional)
Preparation

Split leeks down the middle and wash under running water. Chop leeks, discarding the green portion.
Mince onion.
Saute onion with leeks in butter until soft.
Add diced potatoes and water to cover.
Simmer 15 minutes, covered, until potatoes are tender.
Puree in blender.
Add milk and reheat or chill to serve cold.
Add salt, pepper, chopped chives if desired.
Makes 4 cups.
