Zucchini Bread - cooking recipe

Ingredients

3 eggs
1 c. vegetable oil
2 c. sugar
2 c. grated and peeled zucchini
3 tsp. vanilla
1/2 c. chopped nuts
3/4 c. raisins
3 tsp. cinnamon
3 c. flour
1/4 tsp. baking powder
2 tsp. baking soda
1 scant tsp. salt

Preparation

*If you freeze and defrost zucchini and don't remove water, it will be more moist.
