Chicken Gumbo - cooking recipe

Ingredients
    1 (2 lb.) hen or skinless chicken breasts
    1/4 c. oil
    1 c. onions, chopped
    1 c. celery, chopped
    2 to 3 cloves garlic, chopped
    1/4 c. flour
    salt
    black pepper
    cayenne pepper (optional)
    gumbo file
Preparation
    Cut up hen and season generously with salt and pepper.
    Brown in oil in heavy pot over medium heat until golden brown.
    Remove chicken to large pot or Dutch oven.
    Use remaining oil in pot to make roux.
