Summer Squash Casserole - cooking recipe

Ingredients
    2 large zucchini or yellow squash, cubed
    1/4 c. diced onion
    1 c. shredded carrots
    1 can cream of chicken soup
    1 c. sour cream
    1/2 c. butter
    1 (8 oz.) Stove Top stuffing mix
Preparation
    Preheat oven to 350\u00b0.
    Cook zucchini, squash and onion in salted water for 5 minutes and drain.
    Combine soup and sour cream.
    Stir in carrots.
    Fold in zucchini and onion mixture. Combine stuffing mix according to package directions and spread 1/2 into baking dish.
    Spoon in vegetable mixture and spread remaining stuffing mixture over vegetables.
    Bake for 25 to 30 minutes uncovered.
