Sicilian Meat Roll - cooking recipe

Ingredients
    2 beaten eggs
    3/4 c. soft bread crumbs
    1/2 c. tomato juice
    2 Tbsp. snipped parsley
    1/2 tsp. dried oregano
    1 small clove garlic, minced
    2 lb. lean ground beef
    1 1/2 c. (6 oz.) shredded Mozzarella cheese
    8 thin slices boiled ham
    3 slices Mozzarella slices
Preparation
    Combine first 6 ingredients, 1/4 teaspoon salt and 1/4 teaspoon pepper.
    Add beef; mix well on foil.
    Pat meat to 12 x 10-inch rectangle.
    Arrange ham atop.
    Top with shredded cheese. Starting from short end, carefully roll up meat, using foil to lift.
    Seal edges and ends.
    Place seam side down in 13 x 9-inch baking pan.
    Bake in 350\u00b0 oven for 1 1/4 hours.
    (Center will be pink.)
    Halve cheese diagonally.
    Place atop roll.
    Return to oven until melted.
    Makes 8 servings.
