Grilled Vegetables - cooking recipe

Ingredients
    2 yellow squash
    2 zucchini
    1 eggplant
    1 large red onion
    olive oil
    Emeril's Southwest seasoning
Preparation
    Slice the vegetables into long 1/4-inch thick slices.
    Toss in the olive oil and season well with the Southwest Seasoning on both sides. Place on a hot grill and watch carefully, they can burn quickly.
