Pork Loin Roast - cooking recipe

Ingredients
    1 boneless pork loin
    1 onion, sliced
    1 c. baby carrots
    small red potatoes
    1 bay leaf, crushed
    1/2 c. pineapple juice
    1/4 c. soy sauce
    1/2 c. apricot preserves
Preparation
    Place loin in pan, then place all vegetables around the roast. Spread bay leaf on top of meat. Bake, covered, at 325\u00b0 until tender.
