Potato Nuggets - cooking recipe

Ingredients
    4 Tbsp. butter
    mashed potatoes (made from 4 large, fresh, cooked potatoes)
    1 1/4 c. flour
    2 eggs, lightly beaten
    2 Tbsp. chopped parsley
    1/2 c. finely chopped pimiento
    1 tsp. salt
    freshly ground pepper
    1 1/2 to 2 qt. vegetable oil
Preparation
    Heat the butter in a heavy saucepan and add the potatoes and 1 cup of flour.
    Stir constantly over moderate heat for about 5 minutes.
    Add the eggs and cook for 5 more minutes, continuing to stir.
    Remove from the heat and stir in the parsley, pimiento, salt and pepper.
    Taste for seasoning.
    With 2 teaspoons, shape the mixture into 36 balls.
    Dust each one lightly with the remaining flour.
