Sally'S Lentil Soup - cooking recipe

Ingredients
    1 1/2 c. lentils
    1 (28 oz.) can plump tomatoes
    3 qt. water
    1/2 c. olive oil
    1 medium onion, chopped
    2 ribs celery, chopped
    2 carrots, chopped
    1 (10 oz.) pkg. frozen spinach, chopped
Preparation
    Place lentils in bowl.
    Add water; soak overnight.
    Drain and discard soaking water.
    Wash lentils well in water.
    Place lentils in soup pot; cover with 3 quarts of water and bring to a boil. Add onion, celery, carrots, tomatoes, olive oil and spinach.
    Salt and pepper to taste.
    Add grated cheese.
