Corn Oysters - cooking recipe

Ingredients
    2 c. corn kernels
    1/4 tsp. salt
    2 eggs, separated
    4 green onions, finely chopped
    2 Tbsp. flour
    1/8 tsp. pepper and sugar
    butter or oil (for frying)
Preparation
    Mash the corn to break it up slightly, but do not puree it. Mix in the flour, salt, pepper and sugar.
    Beat the egg yolks until thick and lemon-colored and combine with the corn. Beat the egg white until stiff peaks form and fold into the corn mixture. Heat a small amount of butter or oil in a frying pan and when hot, drop in the corn mixture by tablespoonfuls.
    Cook until risen and brown on both sides, turning once.
    Serve with chopped green onions and accompany with pepper relish.
    Serves 4.
