Rose'S Eggplant Marinara Over Ziti - cooking recipe

Ingredients
    1/2 c. pure olive oil
    6 cloves garlic
    1 tsp. basil, crushed
    2 large cans whole tomatoes, put through blender
    1 tsp. oregano, crushed
    salt to taste
    1 large eggplant
    1 lb. ziti, cooked per directions on pkg.
Preparation
    Saute chopped garlic and olive oil until golden, then add tomatoes, basil, oregano and salt.
    Simmer for 1 hour.
    Take one large eggplant, unpeeled, and cut into small pieces.
    Saute in 1/2 cup pure olive oil until light brown.
    When done, combine sauce and eggplant.
    Pour over cooked ziti.
    Serves 8.
