Tommie'S Fresh Apple Cake - cooking recipe

Ingredients
    3 c. diced apples
    2 c. sugar
    2 large (or 3 small) eggs
    1 tsp. vanilla
    1 c. vegetable oil
    3 c. self-rising flour
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1 c. pecans
Preparation
    Mix apples and sugar; let stand for 1 hour.
    Blend together eggs, vanilla and oil.
    Sift flour, cinnamon and nutmeg together. Pour egg mixture into apples and mix.
    Stir in flour mixture and nuts.
    Bake in a tube pan for 1 hour at 350\u00b0.
    Any cake pan can be used.
