Italian Eggplant - cooking recipe

Ingredients
    vegetable oil spray
    1 (1 1/2 lb.) eggplant
    1 2/3 c. chopped onions
    8 oz. fresh mushrooms, sliced (canned may be used)
    1/2 tsp. salt
    1/2 tsp. Italian seasoning
    6 oz. part skimmed Mozzarella cheese, sliced
    1 (8 oz.) can tomato sauce
    1 Tbsp. oil (olive, optional)
    3 or 4 cloves garlic
Preparation
    Preheat broiler. Spray 8 x 8-inch pan and a 10 x 10-inch piece of aluminum foil with vegetable spray. Peel and slice eggplant in 1/4 inch thick slices. Place on cookie sheet and broil 2 or 3 minutes on each side. Remove from oven and reduce heat to 375\u00b0.
