Sully'S Sausage Soup - cooking recipe

Ingredients
    2 medium zucchini, thinly sliced
    1 large (32 oz.) can peeled tomatoes
    1 lb. sweet sausage
    2 cans beef broth
    1 c. water
    1 medium onion, chopped fine
    oregano, salt and pepper to taste
    fresh grated Parmesan cheese
Preparation
    Brown onion and sausage in soup pan, then slice sausage into thin pieces.
    Add remaining ingredients; bring to boil.
    (Crush tomatoes with spoon.)
    Reduce heat to simmer; cook until zucchini is tender.
    Serve hot with cheese sprinkled over top.
    For healthier soup, cool and skim fat off top.
    Freeze what isn't used.
    Serves 4 to 6.
