Microwave Twice Baked Potatoes - cooking recipe
Ingredients

4 medium to large potatoes
3/4 c. sour cream
3 tsp. butter
1 c. grated cheese
salt and pepper to taste
2 to 3 tsp. chopped chives (dried)
Preparation

Microwave the potatoes 15 minutes or until done but not too soft.
Cut the potatoes at the top just enough to scoop out the inside, leaving the shell.
Add the sour cream, butter, 3/4 cup of the cheese, salt and pepper.
Blend the mixture until it is smooth.
Fill the shells with the mixture, then top them with the remaining cheese and chives.
Microwave for 2 minutes; serve hot.
