Oven-Fried Okra - cooking recipe

1 1/4 c. cornmeal
1 3/4 lb. fresh okra
vegetable cooking spray
buttermilk
Preparation

Wash okra; drain.
Cut off tip ends; cut okra into 1/2-inch slices.
Soak in buttermilk.
Dredge in cornmeal.
Lightly coat a 15 x 10 x 1-inch jelly roll pan with cooking spray.
Spread okra in a single layer in pan.
Bake at 450\u00b0 for 30 to 40 minutes, stirring occasionally.
