Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini (rind and all)
    4 c. ground onion
    1 ground red pepper
    5 Tbsp. salt
    1 Tbsp. cornstarch
    4 c. sugar
    2 1/4 c. vinegar
    1/2 tsp. pepper
    1 Tbsp. dry mustard
    2 tsp. celery seed
    1 Tbsp. turmeric
    1 Tbsp. nutmeg
Preparation
    Mix zucchini, ground onion, red pepper and salt and let stand overnight.
    Rinse in clear water twice.
    Drain.
    Add cornstarch, sugar, vinegar, pepper, dry mustard, celery seed, turmeric and nutmeg.
    Cook slowly 30 minutes.
    Seal in hot, sterilized jars. Makes 8 pints.
