Confetti Slaw - cooking recipe
Ingredients

3 lb. shredded slaw mix or make your own with cabbage and carrots
1 large red onion, peeled and sliced paper thin
3/4 c. cider vinegar
3/4 c. sugar
1/2 c. vegetable oil
3 Tbsp. prepared mustard
2 tsp. each salt and pepper
Preparation

Toss the slaw mix with the onion slices. Combine remaining ingredients. Shake well to blend and pour over vegetables. This needs to cure at least 48 hours in the fridge before serving and it should be stirred up at least twice. Will keep 10 days in the fridge. Serves 12. Since it is mayonnaise-free, it is perfect for picnics and potlucks.
