Ingredients

2 eggs, beaten
1 c. sugar
1 c. milk
5 Tbsp. melted shortening
4 c. sifted flour
4 tsp. double-acting baking powder
1/2 tsp. cinnamon or 1 tsp. lemon rind, grated
1/2 tsp. salt
1/4 tsp. nutmeg
fat (for frying)
Preparation

Beat eggs; add slowly, beating constantly, the sugar, then stir in the milk, shortening, sifted flour, resifted with baking powder, cinnamon or lemon rind and salt.
Add 1/4 teaspoon of nutmeg (if desired).
Mix moist and dry ingredients.
