Sweet-Sour Chicken - cooking recipe

Ingredients
    2 whole chicken breasts
    1 large onion, cut into thin wedges
    1 green pepper, cut in 3/4-inch squares
    4 Tbsp. vegetable oil, divided
    2 Tbsp. vinegar
    1 Tbsp. cornstarch
    1 (20 oz.) can pineapple chunks in juice
    2 Tbsp. ketchup
    2 Tbsp. light brown sugar
    1 large tomato, cut in 8ths
    soy sauce to taste
    hot cooked rice
Preparation
    Skin and bone chicken breasts; cut chicken into 1-inch squares.
    Saute onion and pepper in 2 tablespoons of hot oil in a large skillet, stirring until vegetables are crisp and tender. Remove to dish and set aside.
