Puree Of Sweet Potatoes - cooking recipe

Ingredients
    1 1/2 lb. sweet potatoes
    1/4 c. cream
    6 Tbsp. softened butter
    1 Tbsp. light rum
    2 tsp. grated fresh ginger
Preparation
    Bake potatoes (in skins after washing) at 400\u00b0 for 50 minutes, or until tender.
    Peel and mash with butter and rum.
    Stir in ginger.
    Turn into saucepan over medium-low heat, stirring frequently to let most of the moisture evaporate from potatoes. Stir in cream.
    Add salt and pepper to taste.
    Serves 6.
