Fancy Chicken Puff Pie - cooking recipe
Ingredients

4 Tbsp. butter or margarine
1/4 c. shallots
1/4 c. all-purpose flour
1 c. chicken stock or broth
1/4 c. sherry
1/8 tsp. white ground pepper
pinch of ground nutmeg
salt to taste
1/4 lb. ham, chopped small
3 c. cooked chicken, chopped
1 1/2 c. fresh asparagus pieces or 10 oz. frozen
1 c. (1/2 pt.) heavy cream
1 egg, well beaten
1 chilled pie crust or 1 sheet frozen puff pastry
Preparation

In medium saucepan over medium-high heat, melt butter and saute shallots lightly.
Stir in flour until creamy.
Add broth and sherry slowly; heat until boiling and gravy is smooth.
Season to taste with nutmeg, salt and pepper.
Reduce heat to low and simmer 5 minutes.
Stir in ham, chicken, asparagus and cream. Pour chicken mixture into ungreased 9-inch pie plate.
