Take A Leek Dressing - cooking recipe

Ingredients
    2 c. diced celery
    2 c. diced leeks
    1 medium onion, minced
    3/4 c. margarine
    4 qt. lightly packed day-old bread cubes
    add 4 or 5 slices regular bread (if needed)
    7 or 8 tsp. poultry seasoning or crushed sage
    1 tsp. pepper
Preparation
    Simmer celery and leeks in boiling water for 15 minutes or until tender.
    Drain, reserving 2 cups of the liquid.
    Cook the onion in the butter over low heat until tender, but not brown. Mix bread and seasonings together.
    Add celery , leeks, as much reserved liquid as you need to make moist, butter and onion.
    Mix together with a fork.
    Stuffs a 10 to 12 pound bird.
