Spinach Rice - cooking recipe

Ingredients
    vegetable cooking spray
    1 tsp. olive oil
    1 c. frozen chopped onion
    1 1/2 c. uncooked instant brown rice
    1 2/3 c. water
    1 (10 oz.) pkg. frozen chopped spinach
    2 Tbsp. grated Parmesan cheese
    1/8 tsp. salt
    1/8 tsp. ground nutmeg
Preparation
    Coat a large saucepan with cooking spray.
    Add oil.
    Place over high heat until hot.
    Add onion and saute 1 minute.
    Add rice, water and spinach.
    Bring to a boil. Cover, reduce heat and simmer 13 minutes or until liquid is absorbed and spinach is thawed, breaking spinach apart with a fork. Stir in cheese, salt and nutmeg.
    Yields 4 servings.
    Serving size is 1 cup.
