Red Cucumber Rings - cooking recipe

Ingredients
    7 lb. large cucumbers, peeled and seeded
    2 c. vinegar
    1 oz. red food coloring
    1 tsp. alum
    1 c. lime
    7 c. sugar
    8 sticks cinnamon
    10 oz. red hot candy
    water
Preparation
    Soak cucumbers in lime and 1 gallon water for 24 hours; drain and rinse.
    Cover with ice water for 3 hours; drain.
    Mix 2 cups vinegar, red food coloring and alum with water to cover.
    Simmer for 2 hours; drain.
    Mix 2 cups vinegar, 2 cups water, sugar, cinnamon sticks and red hot candy.
    Pour over rings and let stand for 24 hours.
    Drain and save liquid.
    Bring liquid to a boil. Place pickle rings in jar.
    Pour boiling syrup over pickles and seal.
