Baked Squash Casserole - cooking recipe
Ingredients

2 lb. zucchini or yellow summer squash
3 Tbsp. chopped onion
3 eggs, beaten
2 tsp. parsley flakes (fresh can be used)
salt and pepper to taste
1/4 c. melted margarine
2 c. cracker crumbs
Preparation

Slice squash in 1/2-inch pieces.
Boil three minutes until tender.
Drain; add onion, eggs and seasonings.
Mix until well blended.
Pour into 1-quart greased casserole.
Mix butter and crumbs.
Bake at 350\u00b0 for 35 to 45 minutes until browned.
During last five minutes of cooking, grate Cheddar cheese on top of casserole to melt.
