Quick Tortellini Soup - cooking recipe

Ingredients
    2 cloves garlic
    1 Tbsp. olive oil
    2 (14 oz.) cans chicken stock or vegetable stock
    1 (9 oz.) pkg. fresh tortellini (cheese filled)
    1 (14 oz.) can Italian stewed tomatoes, mashed slightly
    1/2 bunch fresh spinach, torn
    6 fresh basil leaves, 1/2 tsp. dried basil or 1 Tbsp. pesto
    freshly grated Parmesan or Romano
Preparation
    Saute garlic cloves lightly in olive oil.
    Add chicken or vegetable stock and fresh tortellini.
    Cook until tortellini is tender (about 8 to 10 minutes).
    Add remaining ingredients, except cheese.
    Simmer 2 minutes.
    Serve immediately, topped with cheese.
