Marinated Potato Salad - cooking recipe
Ingredients

2 1/2 lb. potatoes
1/3 c. cider vinegar
1/4 c. corn oil
2 Tbsp. sugar
1 tsp. salt
1/4 tsp. pepper
4 hard-boiled eggs, chopped
1/3 c. chopped onion
2 Tbsp. minced parsley
1/2 c. real mayonnaise
Preparation

Cook potatoes until tender.
Meanwhile, beat together vinegar, corn oil, sugar, salt and pepper and set aside.
Slice potatoes and put into large bowl.
Add egg, onion and parsley and toss lightly.
Immediately pour oil mixture over potatoes but do not toss.
Let marinate 1 hour.
Add mayonnaise and toss lightly. Makes 6 to 8 servings.
