Potatoes O'Brien - cooking recipe

Ingredients
    1 medium onion, chopped
    3 Tbsp. green pepper, chopped
    4 Tbsp. butter
    1 Tbsp. pimentos, chopped
    salt and pepper to taste
    2 c. milk
    2 c. cubed, cooked potatoes
    3/4 c. grated cheese
    2 1/2 Tbsp. cornstarch
Preparation
    Cook onions and green pepper in butter about 5 minutes.
    Stir in pimentos and cornstarch.
    Add milk and cook until thickened. Add potatoes.
    Pour into 1 1/2-quart casserole; top with cheese. Bake at 350\u00b0 for 30 minutes.
    Note:
    Can be made and refrigerated. Bake before serving.
