Vidalia Onion Pie - cooking recipe

Ingredients
    3 medium Vidalia onions (sweet)
    2 Tbsp. butter
    1/2 lb. sharp Cheddar cheese, grated
    3 eggs, beaten
    1 1/2 c. scalded milk
    salt and pepper to taste
    35 saltine crackers
    1/4 lb. softened butter
Preparation
    Crumble saltines and combine with softened butter.
    Press onto the bottom of a glass baking dish (a square one is good).
    Saute the onions (peeled and sliced) in 2 tablespoons butter until golden, but not brown.
    Put the onion mixture on top of the saltine crust.
    Spread the grated cheese over this mixture.
    Mix the custard in a bowl (milk, eggs, salt and pepper). Pour over the top of the casserole and bake at 350\u00b0 for 25 minutes. Bake until golden.
    Keeps well. Freezes well, too!
