Spanish Rice - cooking recipe

Ingredients
    1 large green pepper, chopped
    1 large tomato, chopped
    1 medium onion, chopped
    2 Tbsp. butter
    2 c. cooked rice
    1/3 c. water
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    In a 1-quart microwave-safe casserole dish, combine green pepper, tomato, onion and butter.
    Cook, covered, on High for 5 to 6 minutes or until vegetables are tender, stirring once.
    Stir in cooked rice, water, salt and pepper.
    Cook, covered, on High for 3 to 4 minutes or until mixture is heated through, stirring once. Makes 6 side-dish servings.
