Lemon-Pecan Cookie Brittle - cooking recipe
Ingredients

1 c. butter, softened (no substitutions)
1 c. plus 1 Tbsp. confectioners sugar
1 tsp. grated lemon peel
1/4 tsp. salt
2 c. all-purpose flour
1/2 c. finely chopped pecans
Preparation

Preheat oven to 325\u00b0.
Beat butter in mixer bowl until smooth. Beat in 1 cup confectioners sugar until fluffy.
Beat in lemon peel and salt.
Beat in flour until well combined.
Stir in pecans. (Mixture will be crumbly.)
With lightly floured fingertips, press dough into 15 1/2 x 10 1/2-inch jelly roll pan, leaving edges slightly thicker.
Bake 25 to 28 minutes, until top is completely golden.
Transfer to wire rack to cool.
Sift remaining 1 tablespoon confectioners sugar on top.
Break into chunks as desired.
Makes 50 (2 x 1 1/2-inch) cookies.
