Vegetable Medley - cooking recipe

Ingredients
    1/2 lb. sliced mushrooms (about 2 c.)
    3 small zucchini, sliced (about 3 c.)
    2 medium green peppers, cut in strips
    1 c. sliced onion
    1 large clove garlic, minced
    1/2 tsp. basil leaves, crushed
    2 Tbsp. salad or olive oil
    1 can (10 3/4 oz.) tomato soup
    1/2 tsp. salt
    grated Parmesan cheese
Preparation
    In large heavy pan, brown mushrooms and cook zucchini, green pepper and onion with garlic and basil in oil 5 minutes.
    Add soup and salt.
    Cover; cook over low heat 15 minutes.
    Stir occasionally.
    Uncover; cook 5 minutes more.
    Serve with Parmesan.
    Makes about 6 cups.
