Hearty Potato Soup - cooking recipe
Ingredients

6 medium potatoes, peeled and cubed
2 carrots, diced
6 stalks celery, diced
2 qt. water
1 onion, chopped
6 Tbsp. oleo
6 Tbsp. flour
1 1/2 c. milk
Preparation

In a large kettle, cook vegetables until tender, about 20 minutes.
Drain, reserving liquid.
Set aside.
Saute onions in oleo until soft.
Stir in flour and season to taste.
Gradually add milk, stirring constantly.
Stir in vegetables.
Add 1 cup or more of liquid.
Cook until desired consistency.
Makes 8 to 10 servings, 2 1/2 quarts.
