Parsley Minute Rice - cooking recipe

Ingredients
    1/3 c. green onions (tops only)
    1/3 c. green bell peppers or combination of green and red bell peppers
    1/2 c. fresh parsley (not stems)
    1/3 c. celery, thinly sliced
    2 Tbsp. shredded carrot (optional)
    1 1/2 c. water
    1/2 tsp. salt
    1 Tbsp. butter
    1 1/2 c. Minute rice
Preparation
    Chop green onions, bell peppers and parsley.
    Add thinly sliced celery and shredded carrot; set aside.
    Bring water, salt and butter to a boil.
    Stir in rice and vegetable mixture.
    Cover and remove from heat.
    Allow to set for 5 minutes, then fluff with fork before serving.
    Yield:
    4 servings.
