Chicken Tetrazzini(For 50) - cooking recipe

Ingredients
    1 lb. Cheddar cheese, shredded
    6 lb. cooked chicken, chopped/diced
    6 oz. pimento, chopped
    2 Tbsp. parsley, chopped
    2 1/2 lb. spaghetti or egg noodles
    1 1/2 Tbsp. salt
    2 Tbsp. cooking oil
    2 1/2 gal. boiling water
    12 oz. margarine or butter
    8 oz. onion, finely chopped
    1 1/2 lb. mushrooms, sliced
    2 large cans (32 oz.) cream of mushroom, chicken or celery soup
Preparation
    Mix together chicken, pimento and parsley.
    Add salt and cooking oil to boiling water, along with spaghetti, and cook according to directions.
    Drain.
