Potato Leek Soup - cooking recipe

Ingredients
    1 lb. potatoes, scrubbed and sliced
    3 or 4 leeks (white part and 1 inch green), split open lengthwise and sliced
    4 c. chicken stock (may use canned)
    4 c. water
    1 to 3 Tbsp. butter to taste
    1 bay leaf
    salt and pepper to taste
Preparation
    In a large soup pot, combine potatoes, leeks, stock, water and butter.
    Bring to a boil, turn down heat and let simmer for about 1 hour.
    Stir occasionally.
    Taste for seasoning and add salt and pepper if needed.
    Mash some of the potatoes into the soup to thicken slightly.
    Serves 6 to 8.
