Jen'S Chow-Chow - cooking recipe

Ingredients
    1 lb. boneless pork, cut into 3/4-inch cubes *
    1 Tbsp. taco seasoning mix
    2 tsp. vegetable oil
    18 oz. chunky style salsa
    1/3 c. peach preserves
Preparation
    Coat pork with taco seasoning.
    Heat oil in large nonstick skillet over medium heat.
    Add pork and cook until brown.
    Add salsa and preserves to pork.
    Cover and simmer on low heat for approximately 30 minutes.
    Serve over a bed of rice.
