Eggplant Elegant - cooking recipe

Ingredients
    1 large eggplant
    1/4 c. butter
    1/4 c. grated onion
    1/2 tsp. salt
    2 tsp. Worcestershire sauce
    soda crackers
    1/2 c. grated Cheddar cheese
Preparation
    Peel and cube a large eggplant into 1-inch pieces.
    Cook until tender in as little water as possible about 5 minutes.
    Stir frequently to cook all the cubes.
    Remove from heat; add butter, grated onion, salt and Worcestershire sauce.
    Blend all ingredients and add crumbled crackers, until all moisture is absorbed.
    Place mixture in a greased 1-quart baking dish; cover with grated cheese and bake
    in 400\u00b0 oven about 20 minutes, until thoroughly heated and cheese is slightly browned.
    Serves 6.
