Low-Fat Chicken And Rice - cooking recipe

Ingredients
    2 lb. chicken breasts, skinned
    2 c. long grain rice
    1 Tbsp. oil or Pam
    1/2 c. chopped onion
    1 small can mushrooms, drained
    1 small can water chestnuts, drained
    1 can chicken broth
    2 1/2 c. water
    salt and pepper
Preparation
    In skillet add oil; sear chicken 5 to 10 minutes each side. Remove meat.
    Add all other ingredients.
    Boil 5 to 8 minutes. Place chicken breasts on rice.
    Reduce heat.
    Cook for 20 minutes. Let stay on burner 10 minutes before serving.
