Baked Fish In Creole Gravy - cooking recipe

Ingredients
    2-3 Tbsp. flour
    2-3 Tbsp. bacon drippings
    3 ribs celery, chopped
    1 small bell pepper, chopped
    1 medium onion, chopped
    1 (8 oz.) can tomato sauce
    1-1 1/2 c. water
    salt and pepper to taste
    1 (3-4 lb.) fish, cleaned
Preparation
    Brown flour in bacon drippings until a rich brown.
    Add celery, bell pepper and onion.
    Cook until tender.
    Add tomato sauce and water, cook until smooth and the consistency of gravy.
    Salt and pepper to taste Place well-seasoned fish on greased foil in shallow pan and cover lightly with more foil.
    Bake at 350\u00b0 about 30 minutes, covered, then remove foil, add tomato gravy and continue cooking uncovered 30-45 minutes longer.
    Baste frequently with tomato gravy.
