Vegetable Sandwich Filling - cooking recipe
Ingredients

2 cucumbers, seeded and chopped
1 c. celery, chopped
1 small onion, chopped
2 carrots, grated
1/2 c. green pepper, chopped
1 envelope unflavored gelatin
1/2 c. vegetable juice
8 oz. whipping cream
1/2 c. mayonnaise
1 Tbsp. lemon juice
Preparation

Chop vegetables fine and mix well.
Add 1 teaspoon salt. Drain on paper towels placed in colander for 1 hour.
Squeeze out any excess moisture.
Mix 1 envelope of unflavored gelatin with 1/2 cup vegetable juice that has been heated.
Mix whipping cream with mayonnaise.
Add gelatin and lemon juice.
Pour over drained vegetables and mix well.
Chill.
Spread on thin sliced bread. Better if it sets overnight.
