Spanakoriso(Spinach And Rice) - cooking recipe

Ingredients
    2 lbs. fresh spinach
    1 c. uncooked rice
    2 medium onions, minced
    1 small clove garlic, minced
    2 Bay Leaves
    2 c. beef broth
    2 Tbsp. tomato sauce
    1/2 c. olive oil
    salt and pepper
Preparation
    Wash and dry the spinach, and tear into pieces.
    Saute the onions, garlic and rice in olive oil until the onions are soft and golden; add tomato sauce, and stir.
    Add spinach, bay leaves, salt and pepper; mix well.
    Add broth, cover and simmer over low fire for 20 minutes.
    This is normally served hot as a side dish, but it is also excellent cold.
