Zucchini Relish - cooking recipe

Ingredients
    10 c. zucchini
    4 large onions
    4 large green bell peppers
    4 large red bell peppers
    1/2 c. salt
    2 1/2 c. cider vinegar
    4 c. sugar
    2 Tbsp. cornstarch
    1 tsp. turmeric
    1 tsp. nutmeg
    1/4 tsp. pepper
    2 tsp. celery seed
Preparation
    Grind vegetables together
    and sprinkle with salt.
    Let set overnight.
    In morning,
    rinse
    and
    drain
    well with cold water. Mix
    together
    the
    following
    ingredients:
    sugar, vinegar, cornstarch, turmeric, nutmeg, celery seed and pepper. Bring to boil in
    large
    kettle.
    Add vegetables and simmer 30 minutes. Ladle into hot jars.
    Water bath for 15 minutes.
