Oatmeal Cookies(Diabetic Cookie) - cooking recipe
Ingredients

1 1/2 c. quick cooking oatmeal (uncooked)
2/3 c. diet margarine, melted
1/2 c. eggs, beaten (2 medium)
non-nutritive sweetener equivalent to 1 1/2 c. sugar
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. skim milk
1 tsp. vanilla
1/4 c. raisins
Preparation

Preheat oven to 400\u00b0.
Measure oatmeal into bowl.
Stir in melted margarine and mix well.
Stir in eggs and sweetener, then add flour, baking powder and salt, alternating with the combined milk and vanilla.
Add raisins.
Drop onto cookie sheet from level teaspoon and bake until golden brown, about 10 to 15 minutes.
