Irish Fruit Cakes - cooking recipe
Ingredients

1 1/2 lb. flour
1 lb. sugar
1 lb. butter or margarine
3 lb. raisins
1 1/2 lb. mixed peel
10 eggs
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 Tbsp. lemon juice
2 Tbsp. lemon rind
1/2 c. whiskey or brandy
Preparation

Cream the butter and sugar well.
In separate bowl, mix salt, cinnamon and nutmeg with flour.
Alternately add eggs and flour mixture to creamed butter and sugar.
Add fruit, lemon rind, whiskey and lemon juice.
Place in a well-greased pan and bake at 350\u00b0 for an hour, then at 300\u00b0 for another hour.
Remove from oven and let cool.
When cool, pour more whiskey on top and wrap in foil.
Store in airtight tin.
Makes 3 cakes.
