Confetti Potatoes - cooking recipe

Ingredients
    1/2 c. chopped zucchini
    1/2 c. celery slices
    1 Tbsp. margarine
    1 c. mushroom slices
    1/2 lb. Velveeta
    4 baked potatoes
    1/2 c. chopped green pepper
Preparation
    Saute zucchini and celery in margarine until crisp-tender and add mushroom slices.
    Cook 1 minute.
    Add cheese, stirring until melted.
    Serve over potatoes.
    May add a drop of sour cream if desired.
