Tortilla Huevos Con Salsa - cooking recipe
Ingredients

4 (6-inch) corn tortillas
1/4 c. diced red bell pepper
1/4 c. diced white onion
2 medium mushrooms, sliced
1 clove minced garlic
2 large eggs or equivalent Egg Beaters, whipped
1/2 c. salsa (Herdez)
2 Tbsp. cooking oil (olive oil)
Preparation

Cut tortillas into strips, about 1/2 x 1 1/2-inches.
Crisp in oil in a frying pan with onion and garlic.
Precook pepper and mushrooms in a covered saucepan in a teaspoon of oil until tender. Low heat for 5 minutes.
Add pepper and mushrooms to tortillas and onion in frypan.
Mix well, then add eggs, folding until eggs are dry.
Add salt and pepper to taste.
Heat salsa in saucepan. Serve with hot salsa spooned over top.
