Hot Tamales - cooking recipe

Ingredients
    1 onion
    7 cloves garlic
    1 tsp. salt
    1 tsp. black pepper
    1 tsp. red pepper (very hot, add 2 tsp.)
    4 tsp. chili powder
    2 tsp. ground cumin
    1/2 c. water
    8 oz. tomato sauce
    2 lb. ground beef
    1/2 c. corn meal
    2 c. meal
    2 1/2 tsp. salt
    1 tsp. red pepper
    1 tsp. ground cumin
    4 to 5 c. chicken broth
    2 tsp. chili powder
    1 tsp. salt
    8 oz. tomato sauce
Preparation
    Mix the first 9 ingredients in a food processor.
    Pour over ground beef and corn meal.
    Mix well and shape into the size of link sausage.
    Roll in meal mixture made with meal, salt, pepper and cumin.
    Put on coffee filter.
    Sprinkle about 1 1/2 teaspoons meal mixture over tamale.
    Roll tightly in filters.
    Pack tightly in a large pot with a rack in the bottom.
    Place tamales open side down.
    Weigh down with a plate.
    Pour into pot the remaining ingredients.
    Simmer 1 hour.
    Remove from broth; drain well. Allow time for tamales to firm up before serving.
