Quick Cornmeal Muffins(Low-Fat) - cooking recipe

1 c. cornmeal
1/2 c. whole wheat flour
1/2 c. unbleached flour
1 Tbsp. baking powder
1 tsp. dried sage
1 c. skim milk
1/4 c. fat-free egg substitute
2 Tbsp. honey
2 Tbsp. oil
Preparation

In a large bowl, whisk together the cornmeal, whole wheat flour, unbleached flour, baking powder and sage.
In a medium bowl, whisk together the milk, egg, honey and oil.
Pour over the dry ingredients and mix well.
Coat 12 muffin cups with nonstick spray.
Divide the batter among the cups, filling them about halfway.
Bake at 450\u00b0 for 15 minutes or until golden.
